Home Plates: Carol’s Lemon Bars recipe

Serves 20
Ingredients:
Crust:
1 cup butter or margarine, softened
2 cups all-purpose flour
½ cup powdered sugar, plus more for garnish
Filling:
2 cups granulated sugar
4 large eggs, beaten well
6 tablespoons lemon juice
1 large lemon rind, grated
¼ teaspoon salt
Directions:

Heat oven to 350 degrees.
Using a food processor, thoroughly mix the butter, flour and powdered sugar. Press dough firmly into a 9-by-13-inch pan. Bake for 15 minutes.
Using an electric mixer or food processor, thoroughly mix the filling ingredients. Pour mixture over the baked crust and bake for 25 minutes, or until top is set. Cool on a wire rack.
Dust top with powdered sugar and cut into 20 squares.
